Listen, folks: firstly, it's got bacon. Secondly, it's cheesy. Super duper cheesy and creamy. Thirdly, you can cook everything in the one pot if you wanted to. So, basically, it won't leave you with a mountain of dishes to wash up afterwards.
This mac and cheese recipe is a staple food in this household. It's made on a regular basis (sometimes twice weekly, thanks to the cravings of certain people whom I live with) and I can't remember a time this recipe wasn't around. It's very easy to throw together and you can even get your kids to cook the entire recipe on their own. It's pretty fool-proof.
This mac and cheese isn't for the fainthearted as the ingredient list will tell you, but your tastebuds will thank you for it. This, people, is comfort food at its finest.
Mum's Mac and Cheese
1 cup (125g) raw macaroni, cooked according to packet directions
2 tbsp butter
1 large white onion, diced
6 bacon rashers
2 tbsp flour
1 1/2 cups milk
2 cups grated cheese
salt and pepper, to taste
Melt the butter in a large saucepan and cook the onion and bacon. Add the flour and slowly add the milk, one third at a time, stirring and boiling the mixture between additions. Stir in the grated cheese and heat only until the cheese melts. Stir in the macaroni into the cheese sauce and season with salt and pepper to taste.
