fresh strawberry muffins

Summerrrr. Oh, how I heart thee. Longer days, hot sunshine, clear blue skies, thongs, summer dresses, beach, barbecues, salads, fresh fruit.... mosquitos.

Bzzzzzzz. Slap. Bzzzzzz! 

Okay okay, I don't like mosquitos. But I love everything else about summer, so I guess I'll just have to put up with those buzzing little blood-suckers.

Summer also means fruits, and fruits in abundance. Strawberries are some of my favourite fruit, so what better way to use them up than to stick them into muffins?

Fresh Strawberry Muffins
Makes 10-12 muffins

1 cup fresh strawberries, chopped
1 3/4 cups flour
1/2 cup sugar
1 tbsp baking powder
1 tsp vanilla essence
1/4 cup vegetable oil
1/2 cup milk
1 Egg
1/2 tsp salt

Preheat the oven to 180C and line muffin tins with paper liners.
In a small bowl mix together the vegetable oil, vanilla, milk and egg and beat lightly. In a larger bowl mix together the flour, salt, baking powder and sugar.

Add the chopped strawberries to the flour mixture then pour the milk mixture and combine until just mixed. Fill muffin cups 2/3 full and bake for 20-25 minutes or until a skewer inserted comes out clean.
