My mini strawberry cheesecakes were such a success that I wanted to experiment with more mini cheesecake recipes.
The strawberry cheesecakes were slightly healthier than your average cheesecake recipe with the addition of yoghurt. You couldn't guess that they were healthier as they tasted like normal cheesecake. Rich, but not too rich, and sweet. Perfect.
This recipe is quite different though. I have not made any attempt to "health-ify" this cheesecake recipe. And - can I let you in on a secret? - these cheesecakes are super rich and creamy, super sweet and are super, super moreish. I dare you to try stopping at one. They are so good.
Plus they've got chunks of Snickers chocolate in them. Nice, big fat chunks of peanut-buttery, caramel-y, nougat-y chocolate-y goodness. And then you can pipe swirls of cream on top of the individual cheesecakes and finish with more Snickers. I don't think cheesecake can get any better.
Mini Snickers Cheesecakes
makes 12-15 mini cheesecakes
1/2 cup white sugar
2 large eggs
16 "fun size" snickers candy bars, chopped (2 cups total)
10 Oreos, crushed
2 tbsp melted butter
Place cream cheese into bowl of stand mixer. Mix on medium-low speed for 30 seconds. Add in sugar and eggs and beat until smooth.
Remove bowl from stand and stir in chopped candy bars.
In a small bowl combine the Oreo pie crusts and the butter gently with a fork.
Prepare a 6-inch spring-form pan and then press the Oreo mixture into the pan and up the sides.
Pour the filling into the pan and bake until set, 35-40 minutes at 325 degrees.
Set the pie on a wire rack and let it cool completely.
