feta, chickpea and avocado salad

Recipes with a very short ingredient-list attract me. That means they're usually very easy to make and don't require many dishes to be dirtied. But recipes with barely any ingredients in them may also scare a person. Where's the flavour? you ask, I like my food to be tasty and filling and and... everything!

You know, a small quantity of ingredients should never turn you away. This salad takes about 7.39 minutes (or less) to put together and it's surprisingly filling, making it an excellent lunch.

It's very tasty too, and it'll leave you going back for thirds and fourths (maybe even fifths). The salty feta, sweet onion and creamy avocado and chickpeas are something wonderful and will leave you feeling satisfied and refreshed. It's the perfect summer salad.

Feta, Chickpea and Avocado Salad
serves 4

1 can chickpeas, rinsed and drained
2 avocados, diced
⅓ cup chopped parsley
2 tbsp green onion, thinly sliced
⅓ cup feta cheese
Juice of 1 lime
Salt and pepper, to taste

Combine all the ingredients in a large bowl and stir gently to combine, making sure not to mash the avocados and feta. Season with salt and pepper to taste.
