healthy banana walnut muffins {sugar, dairy and egg free}





For those of you who know me, I'm a self-confessed health nut. I do bake sinfully unhealthy foods, yes, but it's rarely that I indulge in such pleasures. Deep down, I'm quite health conscious and love eating fresh, healthy foods. I often crave nothing but salads (weird, right?) and muesli, yoghurt and fruit is usually my signature lunch time food. Places like McDonalds, Pizza Hut or KFC don't tickle my fancy and I don't do fizzy drinks or juice either. I'm not that big on chocolate either, actually.



Sooo...umm... is there anyone still reading this? Or have you all run away in fright?



I came across this recipe somewhere on the internet (can't remember where exactly), tweaked it a little bit and now it's just perfect. You'd never be able to guess that's it's sugar, dairy and egg free. The muffins are flavoursome and I love having the added crunch the walnuts give. These are great if you're after quick and easy breakfast ideas too - simply pop these in the freezer, then microwave one every morning for a nutritious and delicious breakfast.




Banana and Walnut Muffins
Egg, dairy and sugar free
Makes 8

2 tablespoons of olive oil
4 ripe medium bananas, mashed
2 tablespoons honey
2 teaspoons vanilla extract
1 cup wholemeal self raising flour
¼ cup walnuts, chopped

Preheat oven to 180C. Mix bananas, honey, and oil in a bowl. Fold in remaining ingredients and mix. Mixture will be very thick. Spoon into a non-stick muffin pan and bake in a moderate oven for approximately 20–25 minutes.
