Say hellooooo to eating cake for breakfast!
Can you tell I'm just a little bit excited? Apparently stuffing your pie hole with big fat slices of cake for breakfast at 7am every morning isn’t considered healthy.
Well, I guess cake is healthy for your tastebuds (I won’t go into what it can do for your waistline, because there is something called ‘too much information’)
So, you may not feel right about eating a slice of cake for breakfast, but you can have pancakes. Pancakes are considered to be a good, ‘normal’ breakfast, right?
These pancakes are made from a doctored up cake mix. So, uhhh, they taste just like cake (I think you already knew that, amiright?). They’re fluffy, light and are best eaten when they’re hot. Oh, and they taste 762 times better when smothered with mounds of frosting. Obviously. Frosting makes the world better.
So you can have your cake for breakfast and eat it too!
Also if you have a birthday coming up, make a stack of these, stick a couple of candles in and light ‘em up. Perfect birthday breakfast!
Cake Batter Pancakes
makes approx. 12
1 1/2 cups vanilla cake mix
1/2 cup plain flour
3/4 tsp baking powder
1/4 tsp vanilla
1 cup milk
3 tbsp sprinkles (optional)
Sift together the dry ingredients, then add the wet ingredients. Whisk well until mixture is smooth. Lightly spray a nonstick pan with canola oil and cook the pancakes for 2 minutes on each side, or until bubbles start to appear on the uncooked side. Frost the pancakes with the icing and serve warm or cold.
