strawberry cream cheese squares





Did you know the dough that so delicately encases this cream cheese and strawberry filling is made from cream cheese? Like... what? A dough made with cream cheese? Yep. I did not know that one could make a dough from cream cheese before.




This new idea (clearly) seemed completely absurd to me, until I decided to try this recipe out. My mind, you guys. It was forever changed.

The dough is soft, flaky and buttery and it goes perfectly with the cream cheese and strawberry filling. I made two whole trays of this stuff and it got demolished in less than an hour.




Strawberry Cream Cheese Squares
Makes 25 squares

Pastry
225g cream cheese, softened
225g butter, softened
2 cups plain flour
powdered sugar for dusting

Filling
225g cream cheese, softened
1/2 cup icing sugar, or to taste (if you prefer it sweeter, add more)
1 teaspoon vanilla
strawberry jam

Beat cream cheese and butter until smooth, light and fluffy. Add flour and continue to mix until thoroughly combined.
Shape dough into a ball and divide it into 4 rounds. Cover each round with cling film and refridgerate for 30 minutes.

Meanwhile, prepare the filling by combining cream cheese, powdered sugar and vanilla. Beat until creamy and smooth and set aside.

Dust work area with flour. Remove dough from fridge and let rest for 5 minutes. Roll out each ball of dough to a 1/4-inch thickness and cut into 3x3 squares.
Fill the center of each square with 1/2-teaspoon cream cheese mixture and 1/2 teaspoon strawberry jam. For a prettier presentation, you can pipe the fillings using a piping bag.
Overlap opposite corners of dough to the center and over the filling. Pinch seams together and refrigerate for 1 hour. Preheat oven to 190C.
Bake for 10-11 minutes, watching closely, or until edges are browned. Cool completely before serving.
