white chocolate & macadamia pancakes

These white chocolate & macadamia pancakes are almost like eating cookies for breakfast. Except these are pancakes, so you can eat these without feeling bad about stuffing your face with sugary goodness at an unearthly time in the morning.

These pancakes are fluffy and flavoursome. They would make a great Saturday morning breakfast. Or a Sunday night supper. Or even a Monday after-work treat. What I'm trying to say is, these taste great at anytime of day.

White Chocolate & Macadamia Pancakes
makes about 8 small pancakes

1 cup plain flour
1 Tbsp sugar
1 Tbsp baking powder
1 cup milk
1.5 Tbsp oil
1 tsp vanilla
4 Tbsp white chocolate chips
3 Tbsp macadamia nuts, lightly chopped

Combine wet ingredients in a large bowl, then sift dry ingredients into the wet (excluding white chocolate and macadamia nuts).
Whisk batter until just combined then add white chocolate chips and macadamia nuts. Stir and let batter rest for 5 minutes.
Spoon one quarter cup measurements onto a lightly greased pan that has been preheated to medium heat. Flip when bubbles appear on top or the edges look dry, then cook for 1-2 minutes more.
Serve with maple sugar or drizzle with melted chocolate.
