These look like normal chocolate cupcakes on the outside, don't they?
They look like just your average chocolate cupcakes with swirled chocolate ganache.
But no. These are not normal cupcakes. They're surprise chocolate cupcakes.
You'll only discover the surprise when you bite into one:

Once the beans (M&Ms?) have been spilled on what's inside, these will disappear twice as fast as your normal chocolate cupcakes will. And your popularity will shoot through the roof. And people will be lining up at your door wanting more cupcakes. And food magazines will want to publish your recipes in their next issue. Okay, fiiine. Maybe not.
2 cups sugar
1 3/4 cups plain flour
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla essence
1 cup boiling water
150g dark chocolate
Preheat oven to 180C and line a muffin tin with paper liners.
In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla. Beat on medium speed until well combined. Stir in boiling water. The batter will be very runny but don't worry - this means moist cupcakes!
Fill liners 2/3 full with batter and bake for about 18-22 minutes.
For the ganache, heat cream in microwave until very hot; not boiling. Mix in the chocolate and stir until melted. Cool, then beat with an electric mixer to make ganache fluffy.
Cool cupcakes completely then using a paring knife, carefully hollow out the centre. Fill with M&Ms then frost with ganache.
