rocky road brownies

With all the Christmas hype over, it's time to get back to some 'normal' recipes I think. I still have a couple of Christmas-related recipes to share, but seeing as they've been plastered everywhere for the past couple of months, I'll give you a much-needed break from peppermint, gingerbread, and Christmas puddings for a little bit. Sound good? You're welcome.

So... here are my rocky road brownies!



These rocky road brownies are a yummy way to dress up your average brownie recipe.



I mean, normal brownies are good. They're tasty. Delicious. But rocky road brownies?


AMAZE. My, oh my. These are seriously amazing.


The brownie layer is moist and chewy, while the topping adds extra crunch and chocolatey goodness. And did I mention how easy they are?



Rocky Road Brownies
makes 16

125g butter
1/2 cup cocoa
1 cup sugar
1 tsp vanilla
1 cup plain flour
1 tsp baking powder
1/2 cup chocolate pieces
1 cup miniature marshmallows
1/2 cup chopped nuts, such as cashews, peanuts, pecans, or walnuts {I used peanuts}

Preheat oven to 180C. Melt butter then mix in cocoa, sugar, eggs and vanilla. Sift in the flour and baking powder and stir until evenly mixed.
Bake in a 20/23cm square tin lined with baking paper (making sure to leave adequate paper on the sides so that you can easily lift out the brownie once cooked) until brownie is just undercooked, about 20 minutes. Remove from oven and add the chocolate pieces, mini marshmallows and chopped nuts. Return to oven and bake for a further 10 minutes or until a skewer inserted comes out clean. Cool slightly then carefully lift out to cool on a baking rack.
