cheese & zucchini muffins

Introducing.... *drumroll please* ...



...this blog's first-ever savoury recipe!

Cheese & Zucchini Muffins to be exact. Aye, tis a true fact, folks. I hardly ever bake - or even cook - savoury recipes. But things changed after seeing this recipe. It looked easy, yummy, and (dare I say?) semi-healthy. I mean, zucchini's healthy, right?



These muffins are light and fluffy (if not over-mixed, that is) and make a great breakfast. Or morning tea. Or afternoon tea. Or lunch. Or snack. Or... you get the idea. Perfect at anytime of day!






These are my favourite as a breakfast-on-the-go when they're still warm and fluffy out of the oven. Mmmm.
C'mon, folks. Give these a try. You know you want to.

Cheese and Zucchini Muffins
Makes 12

1 tsp olive oil
100g shaved ham, torn into pieces (optional)
½ cup grated zucchini, excess liquid squeezed out
1 cup self-raising flour
1 tsp baking powder
¼ cup vegetable oil
1 cup milk
2 eggs, lightly beaten
1/3 cup grated tasty cheese
¼ cup shaved parmesan cheese

Preheat oven to 190C and line a muffin pan with paper cases.
Combine flours and baking powder in a bowl. Make a well in the centre and add the oil, milk and egg. Mix well. Fold in ham, zucchini and cheeses.
Spoon mixture between the paper cases and bake for 18-20 minutes or until golden and just firm to the touch. Stand in pan for 5 minutes then transfer to a wire rack.
