These banana caramel choc muffins didn't disappoint. After all, they've got caramel flavoured choc chips. Anything with chocolate tastes good I think. But caramel flavoured chocolate? So.good.
I love how with these cake cups, you can just stick them onto a tray instead of in a muffin pan. It fits as many cupcakes as I can squeeze in!
These turned out a bit smaller than I hoped they would though. I think I'll fill the cake cups with a bit more batter next time because I like my muffins big.
Banana Caramel Choc-chip Muffins
1 cup self-raising flour
¾ cup plain flour
¼ cup caster sugar
60g melted butter
1 cup milk
1 egg, lightly beaten
1 tsp vanilla essence
1/3 cup caramel choc bits
1 cup mashed banana (I used 2.5 large bananas)
Preheat oven to 190C and line a muffin pan with paper cases.
Combine flours and sugar in a large bowl. Make a well in the center and add butter, milk, egg, and vanilla. Mix until just combined. Fold in banana and caramel bits.
Spoon mixture evenly between the paper cases and bake for 20-22 minutes or until golden and just firm to the touch. Stand in pan for 5 minutes then transfer to a wire rack to cool.
